Ingredients puff pastry x 2 rolls of the shop bought stuff 1 egg 800g purple sprouting broccoli 40g cheese - gruyere or cheddar (I actually used an aged Schlossberger) Half a red onion Butter Olive oil Salt and pepper 50g Shropshire blue Roll out your pastry sheets. Take the first one and split it in half width ways. With the next sheet, cut it into strips length ways about 2/3cm wide. We want to create a sort of frame around our tarts. You can then use the end of a knife to sort of crimp the crust. Next, brush the edges of your pastry with your whisked egg. Stick your tarts in the fridge whilst we prep the veg. Take your broccoli, put half of them to one side. Trim down the others, placing the trimmings with the others you set a side. We are going to boil the untrimmed broccolis and take the trimmed broccolis and steam them. Both for about 4/5 minutes. Take the steamed broccoli and dunk them in ice water to stop them cooking then drain well. The boiled broccoli can go straight into the food processor. To the food processor add in your grated gruger or cheddar cheese, about 50g butter and a sprinkle of salt and pepper. We are going to create a bright green purée. If it’s looking very thick, just add a little olive oil. Make sure to taste and season accordingly. Using a flat piece of cardboard, cut a rectangle the same size as the centre of your tart. Wrap it tightly in foil and then place in the centre of your tart. We are now going to bake our tart for 10 minutes in a pre heated oven at 180. As these bake, thinly slice half a red onion and sweat down until soft. When the pastry is ready, remove them from the oven and allow to cool a little. Now spread your puree across the centre of the tart. We only need a thin layer. Top this with your onions, followed by the steamed broccoli. Cover the centre again with foil and bake for a further 10 minutes. Now that your pastry is lovely and golden, finish with an extra drizzle of the puree and then crumble over the Shropshire blue. Or whatever blue cheese you prefer. You could also go with a Parmesan. Cut into quarters and serve.
