In the last episode, we discussed how sweating aromatics is a great technique when you want to highlight the natural flavors of an ingredient. It works best in more mild-flavored dishes OR in dishes where you wan to build multiple layers of flavors. Caramelizing on the other hand is those natural sugars cooking and becoming more intense and deeper flavors. This can take place in the form of long and slow cooking- resulting in things like caramelized onions, or it can be done over a faster higher heat to create an intense flavor- this is often referred to as “browning” in a recipe.
