There are a lot of 1'000 CHF bank notes circulating. But of course they are not used in every day life. They are used to store value. Remember, not so long ago we had negative bank interest. So at time you better keep your money in paper rather than put on a bank account.

Of course you use it. As with any note, you want it to be close to what you're paying. Obviously the place that's famous for cheap stuff doesn't want the largest note we have. But we use it all the time to buy a motorcycle, car and so on.
