While I would normally grill these (charcoal is my favorite), you can easily make these indoors like this. . Here is how to make it: 1.Cut 2lb boneless skinless chick thighs into 1.5-2 inch cubes. Skewer the chicken pieces on wooden skewers with an onion wedge on each end. . 5.Add 1 tbsp avocado oil to skillet. Place the chicken skewers in the skillet and cook for 2-3 mins. Turn and cook another 2-3 minss; repeat until the chicken is cooked through and the internal temperature is 165°F when measured with an instant-read thermometer. This should take about 15-17 mins total. Alternatively, you can air fry (400F), bake in the oven (450F), or use a charcoal grill. . 6.Make the sauce by mixing 3/4 cup plain greek yogurt, 1 Persian cucumber finely diced, 3 tbsp finely chopped fresh dill, 1 small shallot finely shredded/processed, juice of half a lemon, a couple pinches salt & pepper. Mix well, then top with olive oil. . 7.Serve with your favorite base. You can use regular rice, pita bread, or if you want to keep things lowcarb either cauliflower rice or my Kaizen Food Company  lowcarb rice. .
