Ndio mambo yenyewe, ama mnasemaje? Samaki Wa Kupaka. Ingredients. 1. Fresh kolekole fish. 2. Marinade the fish in garlic, salt and lemon. 3. Light Coconut Milk 4. Heavy Coconut Milk 5. Salt 6. Garlic Paste 7. A dash of turmeric powder 8. A tablespoon of tomato paste 9. Fish Masala Method. Clean and Wash your fish according to, make nice slits through for perfect cooking inside. Roast the fish on both sides till dry. Now make the paste. Simmer in light coconut milk with salt, garlic and turmeric. When it heavily simmers, add in the heavy coconut milk, a teaspoon of tomato paste and fish masala. Simmer for 3 more minutes. On hot coals, coat the fish with the sauce, let some sauce get into the coals to create a great amount of smoke (this is what makes it samaki wa kupaka), the smoke is an ingredient!
