Perfect when you want something quick but homemade. Ingredients: • 2 sheets puff pastry (275 g each) • 100 g baby spinach • 250 g feta cheese • 100 g shredded mozzarella • 2 eggs • 2 tbsp yogurt • Sesame seeds Line a baking tray with parchment paper and place the first sheet of puff pastry. (If you have one 500 g sheet, divide it in half and roll it out thin.) Wash and dry the spinach well. Mix spinach with crumbled feta, shredded mozzarella, 1 whole egg and 1 egg white (save the yolk for brushing). Mix until combined. Spread the filling evenly over the pastry. Cover with the second sheet. Mix the egg yolk with 2 tbsp yogurt and brush the top. Sprinkle with sesame seeds and cut into portions. Bake at 180°C for 25–30 minutes until beautifully golden and crispy. Buttery layers, creamy filling and that perfect crunch on top… So simple. So good.
