@mamamilliecooks: Okay… hear me out. I cook my tri-tip in the OVEN. At 275°. For almost FOUR hours. And it comes out so juicy it will humble even the most serious grill master. 🔥 No smoker. No babysitting. No flipping. Just season it, seal it, and let it slow roast in its own juices until it’s fork-tender and packed with flavor. Here’s exactly how I do it: 🥩 1–3 tri-tips (I’ve done three in one pouch — it works beautifully) Season generously: • Montreal Steak Seasoning • BBQ Red Rock from Redmond (so good) Drizzle your favorite BBQ sauce over the top. Wrap tightly in foil — I double pouch mine to make sure NO steam escapes. Bake at 275°F for 3½–4 hours. That’s it. When you open the pouch, it will be swimming in its own juices and unbelievably tender. Now the IMPORTANT part: Tri-tip has two different grain directions. Before slicing, look closely — you’ll see the fibers change direction in the center. Slice the roast in half where the grain shifts. Then slice each half against the grain. For the rare to the medium rare meat lovers out there don’t do this. Find a marinate marinate overnight. Throw it in the oven at 190° for two hours take it out let it rest. It will be 120° internal after resting for a half an hour. Turn your oven on at 475. Put it back in let it sear keep checking temperature to 130 to 135. Check it out. Let it rest. Enjoy.
