Long reductions, slow braises and hours of patience - but puttanesca is the opposite. This pasta is all about building deep flavour, fast. Anchovies, garlic, capers, olives and chilli - layered properly to create a sauce that tastes sharp, savoury and structured. Every element is distinct, but nothing dominates. In this version, we keep it classic but with one small twist: a splash of white wine. It’s not traditional, but it doesn’t change the soul of the dish. use only black olives, add dried tomatoes to the initial frying, swap the canned tomatoes with fresh cherry ones, and add canned tuna fillets when cooking done. My modified version, try and see
