Add the minced chicken and cook until browned, breaking it up as it cooks. Stir in the seasonings, then add the tomato paste along with a splash of water and mix well. Add the diced peppers and cook until the mixture is slightly thickened and well combined, then finish with chopped coriander and set aside to cool slightly. Trim the top edge of each tortilla slightly, then roll into a cone shape and seal the edge using a flour and water paste, pressing firmly so it holds. Add a layer of grated cheese into the bottom of each cone, spoon in the cooked minced chicken mixture, and top with more cheese. Place the filled cones on a baking tray and bake at 180°C for 5–7 minutes, just until the cheese melts and helps hold the filling in place.
