An easy and tasty way to preserve seasonal fruit and enjoy it long after harvest. Sour Green Plum Cheong 1 pound sour green plums 1 pound sugar Steps: 1. Wash the plums. Rinse and drain well. 2. Dry the plums thoroughly with a towel. 3. Lightly crush or slice through each plum with a knife to help release the juice faster. 4. In a clean jar, layer the plums and sugar. Close the lid tightly. 5. Let the jar sit in a cool, dry, dark place for 3 days. Turn the jar a few times daily to help dissolve the sugar. 6. Transfer the jar to the fridge for 4 weeks. Turn the jar daily until most of the sugar dissolves. 7. Strain out the plums and save them for later use. Store the syrup in a jar in the fridge. Use the syrup in marinades or sauces.
