I recommend using a 2lb loaf tin lightly greased or lined with parchment paper. Ingredients Dry ingredients: 450g wholemeal flour 25g rolled oats 2 tsp brown sugar 80g chopped nuts (walnuts or pecans) 2 tsp bread soda (baking soda) ½ tsp salt Wet ingredients: 2 tbsp black treacle (or molasses) 30g light olive oil 200g buttermilk 200g Guinness Instructions 1️⃣ Preheat oven to 170°C / 340°F. Grease a 2lb loaf tin. 2️⃣ In a large bowl, combine flour, oats, sugar, nuts, baking soda, and salt. 3️⃣ In a separate bowl, whisk together treacle, olive oil, buttermilk, and Guinness. 4️⃣ Pour wet ingredients into the dry and gently mix until just combined. Do not overmix. 5️⃣ Spoon into the loaf tin and sprinkle extra oats on top if you like. 6️⃣ Bake for 40–50 minutes until risen, hollow-sounding underneath, and a knife comes out clean. 7️⃣ Wrap in a clean tea towel and allow to cool before slicing. Notes • Delicious warm with butter or served alongside soups and stews. • Store in an airtight container for up to 3 days or freeze sliced for later. • Dietitian tip: pair with a protein source like smoked salmon, hummus, or cottage cheese for a more balanced meal.
