@antonycookes: Lo mai gai – glutinous rice with chicken steamed in a lotus leaf – is delicious. I had a piece of pork belly so slow cooked that used it to replace the chicken, which worked very well indeed with the gelatinous fat melting into the sticky rice. The obsessive cook in me then wanted to make a dim sum spread to accompany it. Maybe that was too much, but no regrets because the pork and prawn wontons were wonderful. For the lo mai gai (but with pork belly): Lotus leaf (found in any good Asian supermarket) Glutinous rice Pork belly Spring onion Mushroom Ginger Star anise Clove Pepper Soy sauce Rice wine Oyster sauce #lomaigai #stickyrice #dimsum #dumplings #wonton
