@styledpantry: Ingredients:** • 200g arborio rice • 300g mushrooms, sliced • 1L hot chicken or vegetable stock • 1 onion, finely diced • 2 cloves garlic, minced • 100ml white wine (optional) • 50g parmesan, grated • 3 tbsp butter • 2 tbsp olive oil • Salt, pepper **Directions:** 1. Heat olive oil and 1 tbsp butter in a large pan over medium heat. 2. Cook mushrooms 5 minutes until golden. Remove and set aside. 3. Add onion to the pan and cook 3 minutes until softened. 4. Add garlic and rice. Stir constantly for 2 minutes until rice is lightly toasted. 5. Add wine (if using) and stir until completely absorbed. 6. Add stock one ladle at a time, stirring frequently after each addition. 7. Wait until each ladle is mostly absorbed before adding the next. This takes about 20 minutes total. 8. When rice is creamy and tender, stir in cooked mushrooms, remaining butter, and parmesan. 9. Season with salt and pepper to taste. 10. Serve immediately while hot and creamy.
