@healthygirlkitchen: LAZY PASTA (20-minute dinner)🍝🫶🏼 Ingredients: 3 tbsp olive oil 3 cloves minced garlic 1 zucchini, diced 2 cups baby Bella mushrooms, diced 1 24 oz jar marinara sauce 12 oz pasta of choice Water to just cover the pasta Season with salt and pepper to taste Baby spinach - throw in a few handfuls at the end Garnish w dairy-free parmesan How to: 1. Prep + chop veg. 2. In a pot/large pan on medium heat saute garlic in olive oil for a few minutes then add in the onion, zucchini and mushrooms and saute for 4 minutes. 3. Add in the pasta, 1 jar marinara sauce and water to cover the pasta (make sure its JUST covered). 4. Cover with a lid and cook for 10-15 minutes. (Stir every 3-4 minutes). 5. Once its done stir in baby spinach and top with parmesan cheese. 6. Enjoy!!
