We made this very few days. Blanch the flowers real fast. Then let them dry. THEN make the syrup. It will be purple like it should be not the rot color from damaging the lavender. When you do it this way, you’re ruining the oils of the flower and loosing most of the flavor. Same with basil, sage, mint. They will remain green if you blanch them first
