@pablothefork: Some dishes stick with you longer than the trip. I first had this in Palma de Mallorca, shoutout to my mum who ordered this for me she’s got simple but impeccable taste. Baguette, sobrasada, goat cheese, honey. Nothing crazy. But it was the one I kept coming back for. What I appreciate now is why it worked. Sobrasada brings fat and spice. Goat cheese adds tang and coolness. Honey rounds the edges without turning it into dessert. It’s contrast, not complexity. That’s what good small bites do. They don’t overwhelm. They make sense. Made it again for brunch recently. Different setting. Same feeling. Food travels. Memory stays.
