@sweetconfection: This is my Strawberry Jam Coffee Cake recipe 🍓✨ Soft vanilla crumb filled with real strawberries, a hidden layer of homemade strawberry jam in the center, and topped with a delicate vanilla crumble. 9-inch tall pan Vanilla Strawberry Cake Base Ingredients • 360 g all-purpose flour, sifted • 1½ tbsp baking powder • ¾ tsp salt • 1½ tsp cornstarch • 90 g brown sugar • 90 g white sugar • 170 g unsalted butter, softened (not melted) • 75 g oil • 3 eggs + 1 egg white • 2 tbsp vanilla extract • 90 ml milk • 100 g Greek yogurt • 160 g fresh strawberries, diced • 1 tbsp flour (to coat strawberries) 🍓 Homemade Strawberry Jam (for center) • 200 g fresh strawberries • 40 g sugar • ½ lemon juice • 1 tsp cornstarch Cook until thick. Cool completely before using. You’ll need about 170 g thick jam for the center. Vanilla Crumble • 80 g flour • 50 g brown sugar • 40 g cold butter, cubed • Pinch of salt • Optional: light lemon zest or cinnamon Rub together until small crumbs form. 🍓 Soft Strawberry Glaze Perfect if you want it to gently drip down the sides. Ingredients • 120 g powdered sugar • 2–3 tbsp thick strawberry jam • 1–2 tbsp cream or milk • Pinch of salt How to Make It 1. Mix powdered sugar and jam until smooth. 2. Add cream gradually until it reaches a thick ribbon consistency (fluid but not watery). 3. Add a pinch of salt to balance sweetness. 👉 It should fall in a thick ribbon. 👉 Pour over the cake when it’s warm, not hot. Result: glossy, natural pink, soft elegant finish. Instructions 1️⃣ Preheat 340°F Grease a tall 9” pan and line the bottom with parchment paper. 2️⃣ Dry Ingredients Whisk together flour, baking powder, salt and cornstarch. 3️⃣ Creaming Beat: • Butter + both sugars until light and fluffy • Add oil • Add eggs + egg white • Add vanilla 4️⃣ Alternate Add dry ingredients alternating with: • Milk • Greek yogurt Mix until thick but smooth. 5️⃣ Fold in Strawberries Toss strawberries with 1 tbsp flour. Gently fold into the batter. 🍓 Assembly (to prevent sinking jam) 1. Spread half the batter into the pan. 2. Spoon jam in the center (do not touch the edges). 3. Cover with remaining batter. 4. Sprinkle crumble on top. 👉 Do not swirl. The jam should stay hidden as a soft center layer. Baking • 340°F • 65–75 minutes • Check at 45 minutes • Cover loosely with foil if browning too fast • Toothpick should come out clean from the cake portion #strawberrycake #strawberry #crumble #cake #CapCut
