🥒 Mediterranean Shaved Cucumber Salad This salad is why I always have cucumbers in my fridge. It’s so easy to make and so good. If you love salads that feel light but still eat like a real meal, this one hits. It’s got crispy crunchy cucumbers, some avocado, salty feta, pops of sweetness from a touch of pomegranate, and a lemony olive oil dressing that ties it all together. Fresh, crunchy, and quietly addictive. This one works beautifully on its own, or alongside grilled chicken, fish, or even spooned straight out of the bowl standing at the counter like I did.  Here’s how I made it: 1Thinly shave 1.5 English cucumbers into ribbons. If you prefer coins, thinly slice 5 to 6 Persian cucumbers instead. Add them to a bowl or large jar. 2.Add 1/3 of a small red onion, finely diced. 3.Cut 1 avocado into small cubes so you get a little bit in every bite, then add it to the bowl. 4.Roughly chop a handful of toasted walnuts and toss them in. About 2-3 tbsp 5.Add 4 to 6 tablespoons pomegranate seeds, about half a pomegranate. 6.Add 3 to 4 tablespoons finely chopped fresh parsley and optionally 2 tablespoons finely chopped mint. 7.To dress it up, add the zest and juice of 1 lemon, 2 tablespoons olive oil, and a generous couple pinches of salt and pepper. Optionally add 1 tablespoon sumac. 8.Finish by crumbling 2 ounces of feta over the top. 9.Shake or gently toss until everything is coated and glossy.
