High Protein, High Fiber, Low Calorie (and all the other buzzwords) Bread Pudding with Ice Cream. Here's the full recipe: 1 Egg 1 cup (8oz) 2% Milk (can use skim or whole if preferred) 2oz (weight) Low calorie sweetener, I used a monkfruit/erythritol mix. 1 scoop Vanilla protein powder, I used Dymatize Elite Whey 2 teaspoons Vanilla extract 1/2 tablespoon Cinnamon Pinch of salt 1/2 Loaf High-Fiber Keto bread, about 300g by weight 1 ounce (weight) Raisins (optional) Some extra sweetener and cinnamon, mixed together 1. Place the egg, milk, protein powder, salt, sweetener, cinnamon, and vanilla into a bowl, and whisk together to combine. 2. Cut the bread into cubes and add into the bowl with the liquid mix. Add raisins if using. 3. Mix everything together, until the bread is well coated and soaked with the liquids. 4. Transfer the bread mixture to a baking dish, or portion into single-serve Ramekins (Not sure what size baking dish if doing it that way, but I think a 9x9 should be good). 5. Bake at 325 F for 25 minutes. 6. Allow to cool down a little before serving with your favorite light ice cream (vanilla and salted caramel pair very well). Macros (per serving, 4 servings total): 312 Calories, 71g Carbs (30g Fiber), 9.5g Fat, 31g Protein Might be some adjustments to make, as I didn't recipe test to make it perfect.
