I made it in the @calphalonbrand Ceramic Nonstick collection, which has a PFAS-free ceramic nonstick cooking surface, so NOTHING sticks, everything cooks evenly, and clean up is a breeze thanks to dishwasher safe Quick Cleaning Technology™!  Shop Calphalon Ceramic via the link in my bio. Recipe:  3 Tbsp olive oil, divided  2 yellow onions, thinly sliced  3 cloves garlic, minced 3 Tbsp fresh thyme leaves, divided  2 Tbsp balsamic vinegar  7 ounces Gruyère, grated, divided  1 cup ditalini pasta  3 cups vegetable broth  ½ cup heavy cream  Salt and freshly ground black pepper  ⅔ cup panko breadcrumbs  Heat 2 tablespoons of olive oil in a 10-inch Calphalon Ceramic Nonstick skillet over medium heat. Add the onions and a generous pinch of salt. Cook, stirring occasionally, until deeply caramelized, about 40 minutes.  Add the garlic, balsamic vinegar, 2 tablespoons of thyme, and a few grinds of black pepper. Cook for 1 to 2 minutes, scraping up any browned bits from the bottom of the pan.  Add the ditalini and vegetable broth. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until the pasta is 1-2 min shy of al dente and most of the broth has been absorbed, about 10 minutes.  Meanwhile, heat the remaining 1 tablespoon olive oil in an 8-inch Calphalon Ceramic Nonstick skillet over low heat.  Add the panko, the remaining 1 tablespoon of thyme, and a pinch each of salt and pepper. Toast, stirring often, until the breadcrumbs are golden brown. Sprinkle in ⅓ of the Gruyère and stir until melted and incorporated, creating crispy, cheesy clusters. Remove from the heat and set aside.  Once the pasta is tender, stir in the heavy cream. Season to taste with salt and pepper. Top with the remaining Gruyère and broil on low for 2 to 3 minutes, or until the cheese is melted, bubbly, and lightly browned.
