@la.cuisine.de.geraldine: Have you ever tried Canelés? I think they’re one of the most underrated French pastry classics! Canelés are a specialty from Bordeaux. What makes them so special is their texture: they’re crispy and caramelized on the outside, but still soft and custardy on the inside, with a taste of vanilla and rum. You can bake them either in traditional copper molds or in silicone ones. Will you give them a try? 2 cups / 500 ml whole milk 1 vanilla bean 1 1/8 / 225 g cups granulated sugar 225 g 1 125 g cup all-purpose flour 1 large egg 3 egg yolks 3 ½ tbsp / 50 g unsalted butter melted 3 tbsp dark rum Bake 10 minutes at 465°F (240°C), lower the temperature to 350°F (180°C) and continue baking for about 45 minutes.
