Also great for meal prep and has no fancy ingredients but alllll the flavour 😍👏 Macros 488 calories 40gP / 14gF / 53gC Serves: 2 Shopping list ✍️ - 100g Dry pasta - 250g Lean beef mince - 80g Red onion, finely diced - 80g Red pepper, finely diced - 2 tsp Smoked paprika - 1 tbsp Tomato puree - 1 tsp Garlic puree - 100g Beef stock - 400g Chopped tomatoes - 70gPhiladelphia light - 2 tbsp Parmesan - Fresh parsley, to serve Method ✨ Cook the pasta in salted water for 10 minutes. In the meantime spray a large pan with oil and fry the onions and pepper until softened. Brown the beef mince then mix in the tomato puree, garlic puree and smoked paprika. ✨ Fry for 1-2 mins before pouring in the chopped tomatoes and beef stock. Cook on high until it starts to bubble before mixing in the Philadelphia, half the grated parmesan and parsley. ✨ Mix in the cooked pasta along with a small ladle of pasta water and serve with the remaining parmesan & fresh parsley.
