Mix until smooth and creamy. Add the egg and mix briefly. Add the flour and baking powder, then knead until smooth. Roll out the cookie dough on a lightly floured work surface into a flat sheet. Cut out cookies using a round cookie cutter and place them on a baking tray lined with parchment paper. Bake the cookies in a preheated oven at 190 °C (375 °F) for 7–12 minutes, or until nicely golden brown. Keep an eye on them, as every oven works differently. Let the cookies cool completely. Fill a piping bag with the pistachio paste. Take a cookie and pipe a small swirl of pistachio paste on top. Place a pistachio nut on top of the paste. Repeat with the remaining cookies. Melt the white chocolate using a double boiler (au bain-marie) and place it in a piping bag. Melt the milk chocolate using a double boiler (au bain-marie) as well. Pour the melted milk chocolate into a small, deep bowl and dip the top of each cookie into it. Place the cookies on a sheet of parchment paper and decorate with the melted white chocolate. Let the chocolate set completely.
