This is what we throw together when the kids are somehow still hungry!! Spam Musubi Fried Rice 6 Cups Cooked rice 8 Beaten eggs Spam (diced) 2 tablespoons: Sugar, Soy sauce & Mirin 1 cups Frozen carrots & peas 4 Sliced scallions Get everything ready ahead of time. Slice your scallions and have your rice cooked and cooled (you don’t want the rice to absorb the egg). In a hot pan, add a couple of tablespoons of neutral oil into the pan and dump your rice into it. Pour the beaten eggs over the rice, add a little salt and mix everything together until the eggs are set/cooked/scrambled. Set aside. Dice up your spam. In a hot pan with a little bit of oil, cook the spam until you see a little bit of a golden crust on all the pieces. While that’s going, quickly mixe together in a small bowl , your sugar, mirin and soy sauce until sugar is somewhat dissolved. Then pour the sauce over the spam and sautéed it , moving the pieces around consistently because it will absorb and thicken very quickly. Once it turns into a thick, sticky glaze … set aside.
