@__emilyrangel: Chocolate raspberry truffle sandwich cookies ☕️🍪 Ingredients: ⁃ 1/3 cup @Lifeboost Coffee chocolate raspberry truffle ⁃ 1/4 cup black cocoa powder ⁃ 1/2 cup granulated sugar ⁃ 1/2 cup light brown sugar ⁃ 1/2 cup unsalted butter; softened ⁃ 1 large egg ⁃ 1 tsp vanilla extract ⁃ 1 1/2 cup all purpose flour ⁃ 1 tsp baking soda ⁃ 1/2 tsp salt Raspberry butter cream: ⁃ 1/2 cup unsalted butter; softened ⁃ 2 cups powdered sugar ⁃ Raspberry compote Instructions: In a large bowl, combine the chocolate raspberry truffle espresso shots and black cocoa powder. Mix well and let sit for 10 minutes to allow the cocoa to bloom. Add the butter and both sugars, mixing on medium speed until well combined. Mix in the egg and vanilla extract until smooth. Add the dry ingredients and mix just until combined. Scoop the dough into 14 cookie dough balls and chill for at least 1 hour. Once chilled, gently roll the dough balls and place them on a baking sheet. Bake at 350°F for 15 minutes. While the cookies bake, prepare the buttercream.
