Careful… she goes down far too easily😏 Welcome back to “Single, but cooking like someone’s falling for me tonight.” Who’s hungry?👀  Banana Fosters Pudding Ingredients • 80 g unsalted butter • 130 g light brown sugar • 2½ tbsp golden syrup • 75 ml dark rum • 1 tsp vanilla extract • Pinch of fine sea salt • 4 ripe bananas, sliced (for the Foster’s sauce) • 2–3 ripe bananas, sliced (for layering) • 1 × 397 g tin condensed milk • 400 ml whole milk • 3 egg yolks • 50 g cornflour • 1½ tsp vanilla bean paste or extract • 450 ml double cream, cold • 450–500 g vanilla wafers Method 1. Melt the butter in a saucepan. Stir in the brown sugar and golden syrup until smooth and bubbling. 2. Pour in the rum and simmer for 2–3 minutes. 3. Add the sliced bananas, vanilla and salt. Cook for 2–3 minutes, then continue simmering until the sauce has reduced and lightly coats the bananas. Leave to cool completely. 4. Whisk together the condensed milk, whole milk, egg yolks and cornflour in a saucepan. 5. Cook over a medium heat, whisking constantly, until thick and smooth. Remove from the heat, stir in the vanilla and leave to cool completely with cling film touching the surface. 6. Whip the double cream to soft peaks and gently fold it into the cooled custard. 7. Layer the vanilla wafers in the bottom of a trifle dish, followed by fresh banana slices, the pudding mixture and spoonfuls of the cooled banana Foster’s sauce. 8. Repeat the layers until all the ingredients are used, finishing with the pudding mixture. 9. Top with whipped cream, extra crushed wafers and a drizzle of any remaining banana Foster’s sauce, if desired. 10.
