@sugarspiceddreams: banana bread carrot cake 🤎🥕 this was SO soft & one of my new favs. also don’t mind the plátano in the back i dropped the first loaf right out of the oven and i only had 4 bananas :,) recipe: 1¾ cups all-purpose flour (210g) 1 teaspoon baking powder (4g) ½ teaspoon baking soda (3g) ½ teaspoon salt (3g) 1 tablespoon cinnamon (8g) ½ teaspoon nutmeg ½ cup brown sugar (100g) ¼ cup granulated sugar (50g) ½ cup salted butter, browned (113g) 1 egg, rt (50g) 2 medium ripe bananas, mashed (220g) ¼ cup plain greek yogurt (60g) 1 tbsp vanilla paste (13g) ¾ cup finely shredded carrots (75g) instructions: preheat your oven to 375°f and line a loaf pan. in a medium bowl whisk together the flour, baking powder, baking soda, salt, nutmeg and cinnamon until evenly combined. in a separate bowl whisk the banana & brown butter until combined, then mix in the sugars until smooth. add the egg, greek yogurt( or sour cream ) and vanilla & mix until the batter is smooth. add the dry ingredients into the wet ingredients and gently fold together until mostly combined with a few streaks of flour remaining. add the finely shredded carrots and fold just until everything is incorporated. avoid overmixing so the loaf stays soft and fluffy :) pour the batter into the prepared loaf pan and smooth the top. bake for about 5 minutes then reduce the temp to 350 for 35-30 mins, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. let the loaf cool in the pan for about 15 minutes, then transfer to a rack to cool completely before frosting cinnamon maple frosting: 8 oz cream cheese, softened (226g) 4 tbsp salted butter, softened (56g) 1¼ cups powdered sugar (150g) 1–2 tablespoons maple syrup (15–30g) 1 tbsp cinnamon (8g) 1 tsp vanilla bean paste (5g) instructions add the softened cream cheese and butter to a bowl and beat together until smooth and fluffy. add the powdered sugar and mix until fully incorporated. mix in the maple syrup, cinnamon, and vanilla bean paste and continue beating until the frosting is smooth and creamy. if the frosting feels too thick, add a little more maple syrup. if it feels too soft, add a bit more powdered sugar. spread over the cooled loaf. #carrotcake #bananabread #Recipe #baking
