@jasminseats: Loaded toasts are soooo IN 🍞 Ep 1 - Cheesy Buffalo Chicken Approx 400cals (with toast) 44g protein 33g carbs 9g fat Makes 4: 400g chicken breast 180g Greek yogurt (I used a high protein one) 50g pickled jalapeños, finely chopped (optional) 40-60g buffalo sauce (pending on spice threshold) 5-6 baby cucumbers, diced 3-4 celery stalks, diced Big handful of baby spinach, roughly chopped 1 garlic clove (from poaching liquid), finely minced Salt and pepper + 25g of shredded mozzarella to top. To poach the chicken: 2-3 bay leaves 3-4 garlic cloves 1 tbsp whole black peppercorns Pinch of salt - In a pot with room temp water, add the above aromatics and chicken breast. - Place it on medium heat until it reaches a gentle simmer. You’ll start to see small bubbles rise to the top. Use a spoon to remove any scum that also rises to the top of the water. - Once you reach a gentle simmer, turn to the lowest heat and let it sit for 10-15 minutes. Time will depend on how thick your chicken breasts are. Feel free to take it out and make a cut into the thickest part of the breast to see if it’s still pink. - Once cooked, transfer to an ice bath to stop the cooking process - Once chilled, pull apart with your fingers to shred it! - Assemble toast with cheese on top then chuck it into a pre heated hot grill until cheese melts! #EasyRecipes #buffalocchicken #highprotein #loadedtoasts #shreddedchicken
