🍫Pomegranate Pistachio Chocolate Bark I have seen a lot of versions of this floating around, and I get why. This combo is unreal. Sweet, salty, crunchy, juicy. It hits every note and of course, it’s so easy, and so good! Use as much or as little chocolate as you like. If you are keeping things lower sugar, a stevia or low-carb chocolate works great. I used a stevia-sweetened chip here, but use whatever you enjoy most. Ingredients 1.5 cups chocolate chips of choice 1 teaspoon coconut oil, optional, for thinning 1 small pomegranate or half of a large one, deseeded A handful of salted roasted pistachios Flaky sea salt Here is how I made it: 1.Melt 1.5 cups of your favorite chocolate chips. You can use a double boiler or the microwave in 30-second increments, stirring between each. For a thinner pour, add about 1 teaspoon of coconut oil. 2.Line a plate or cutting board with parchment paper. 3.Pour half of the melted chocolate onto the parchment and spread it into a rough rectangle. 4.Deseed 1 small pomegranate or about half of a large one. Scatter the arils evenly over the chocolate, pressing them lightly so they stick and set properly. 5.Sprinkle a handful of salted roasted pistachios over the top. 6.Drizzle the remaining chocolate over everything. 7.Finish with a pinch of flaky sea salt, then place it in the fridge or freezer until fully set. 8.Once firm, cut into whatever size pieces you like and enjoy.
