Freeze jars of liquid egg without the lids on, then replace the lid and label after the egg is fully frozen. This allows you to safely use almost any jar for freezing, even if it wasn’t specifically made for it. This tip goes for freezing any liquid in jars. Defrost eggs in the refrigerator before use. Once thawed, they will keep for up to 7 days in the fridge. Discard after 7 days. For baking or measured recipes: 1 average egg out of the shell equals about 40 to 45 grams of liquid egg, or a scant 1/4 cup or about 3.5 tablespoons. You can scramble this egg and eat it as normal, or use it in quiche, omelets, baking that calls for whole egg, custards, soups, egg wash, meatballs, basically anywhere a whole egg is used. And no, the texture is not weird. I do recommend blending it on its own or with other liquid ingredients before cooking if you want it ultra smooth. This egg should only be used in fully cooked applications. You can freeze liquid egg in jars, freezer bags, deli containers, or silicone 2 ounce molds if you want individual portions. In an airtight container, frozen egg keeps at its best for up to 1 year. You can also freeze whites and yolks separately. 1 egg white equals about 30 grams or 2 tablespoons. 1 egg yolk equals about 14 to 17 grams or 1 heaping tablespoon. Blend whites or whisk yolks before freezing. This method has come in handy for us many, many times. Save eggs throughout the season so you have plenty in winter if your chickens slow down or stop laying altogether. #eggs #egg #freezing #freezer #foodstorage
