Cheesecake Sticks • 2 blocks cream cheese, softened • 1 cup powdered sugar • 2 tablespoons lemon juice • 1 teaspoon vanilla • 2 tablespoons cornstarch • 2 eggs • 1/4 cup heavy cream • 2 cups graham cracker crumbs • 2 tablespoons sugar • 1/4 teaspoon cinnamon • Oil for frying • Optional: powdered sugar for topping Whip the cream cheese, powdered sugar, lemon juice, vanilla, and cornstarch until smooth. Spread into a lined loaf pan and freeze for 30 minutes. Whisk the eggs and cream in one bowl and mix the graham crumbs, sugar, and cinnamon in another. Slice the cheesecake into 1 inch sticks, dip each into the egg mixture, then the graham mixture, and repeat once more for a double coating. Fry in the oil for 20-30 seconds, turning so all sides brown evenly, then dust with powdered sugar and serve with the blueberry sauce.
