It’s my little sister’s birthday 🎂 🎉 she wanted a vanilla cake with pineapple filling and most importantly a yellow cake 💛😉So why not ❤️ Full Recipe ⬇️ 🎂 Vanilla Cake Ingredients: Cake flour: 3 cups (375g) Baking powder: 3 tsp Corn flour: 1 tbsp Butter (softened): 1 1/2 cup (375g) Granulated sugar: 1 1/2 cups (300g) Eggs (large): 5 Whole milk: ¾ cup (180 ml) Vanilla extract: 1 tbsp Instructions: 1. Preheat your oven to 175°C (350°F). Grease and line three 7-inch round cake pans. 2. In a large bowl, beat the butter and sugar together until light and fluffy. 3. Add eggs one at a time, beating well after each addition. 4. Sift the flour, baking powder and corn flour and mix until combined (Do not beat). 5. Add milk and vanilla and combine together. 6. Divide the batter evenly between the prepared pans and smooth the tops. 7. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean. 8. Cool in pans for 10 minutes, then transfer to wire racks to cool completely. 🍍Pineapple Filling Ingredients: Crushed pineapple (fresh or canned): 2 cups (400g) Granulated sugar: ⅓ cup (65 g) Lemon juice: 1 tbsp Instructions: 1. In a saucepan, combine pineapple, sugar, and lemon juice. 2. Cook over medium heat, stirring constantly, until the mixture thickens and becomes glossy (about 5–7 minutes). 3. Let it cool completely before using. 4. Seperate the pineapple from the liquid. (Use that liquid as a syrup for the cake) 🍥 Buttercream Frosting Ingredients: Unsalted butter (softened): 1 cup (225 g) Powdered sugar (sifted): 4 cups (500g) Vanilla extract: 1 tsp Instructions: 1. Beat the butter until creamy and light in color, about 3–5 minutes. 2. Gradually add the powdered sugar, 1 cup at a time, beating well after each addition. 3. Add the vanilla. Beat on high for 2–3 minutes until fluffy. 🧁 Assembly 1. Level the cooled cake layers if needed. 2. Place one layer on a cake board or serving plate. 3. Spread the pineapple syrup over the layers. 4. Apply frosting to the first layer and then fill with pineapple filling. 5. Top with the second cake layer and gently press down. 6. Repeat. 7. Crumb coat the cake with a thin layer of buttercream and chill for 20 minutes. 8. Apply the final buttercream layer and decorate as desired.
