Cannoli Cake from Cake Mix is a MUST MAKE! (Pillsbury Recipe Spruced Up) Cake Ingredients: • 1 box white cake mix (15.25 oz) • 1 c Greek yogurt • 4 egg whites • ¼ c butter, melted • ¼ c vegetable oil • 1 tbsp vanilla bean paste (or extract) Frosting Ingredients: • 1 ¼ c Pillsbury Vanilla Frosting • 1 container ricotta cheese (15 oz) • 1 tsp – 1 tbsp vanilla bean paste (or extract) • ½ tsp almond extract • 1 ½ c heavy cream, cold Additional Toppings: • Mini semi-sweet chocolate chips • Shaved chocolate • Crushed pistachios  Instructions: 1. In a bowl mix all cake ingredients until just combined, cover bowl with plastic wrap and hydrate batter for 15-45 minutes. While batter hydrates prep a 10-cup bundt pan and preheat the oven to 350. 2. When batter is done hydrating give it a quick mix by hand and pour into the prepared cake pan. Bake for 30-35 minutes or until toothpick comes out the center mostly clean. 3. Out the oven allow cake to cool in pan for 15 minutes then transfer to a wire rack to finish cooling.  4. While cake cools make frosting: in a large bowl combine frosting, ricotta, vanilla bean paste until well combined. Set aside. In a separate bowl add heavy cream, almond extract, and vanilla extract (if using) until stiff peaks form. Fold whipped cream into frosting mixture. If mixture is not set place in fridge for a couple hours before piping. 5. When cake is completely cool cut in half horizontally using a serrated knife (slowly to ensure a straight cut). Set top half of cake aside. Pipe frosting on bottom of cake. Add mini chocolate chips and crushed pistachios on top of frosting. 6. Return top half of cake. Pipe frosting in a ring around top of cake. Top frosting with crushed pistachios and chocolate shavings. #cake #baking #dessert #sweet #EasyRecipe
