Preheat oven to 400°F. 2. Cook pasta according to package directions. Drain. 3. Brown ground beef in a skillet with onion (if using). Drain grease. Stir in taco seasoning and a splash of water according to packet directions. 4. Add cooked pasta and seasoned beef to a baking dish. 5. Stir in corn, black beans, and salsa until combined. 6. Top with shredded cheese. 7. Bake for 10–12 minutes, until cheese is melted and bubbly. 8. Top with sour cream if desired and serve.
