I lined my baskets with parchment paper to prevent the oil from dripping out into my basket and staining the cloth! Looks beautiful!

I did the scallion during my coil folds and then chili oil during final shaping. It’s a lot less messy. Also you should try using the Lao gan ma chili oil crisp…. So much more flavorful
