Cheese Muffin Recipe: Ingredients: 200 g cake flour, 8 g baking powder, 30 g granulated sugar, 2 g salt, 1 egg, 120 ml milk, 50 g unsalted butter, 100 g cream cheese, 80 g cheddar cheese, and 1/2 teaspoon vanilla extract optional. Instructions: Preheat the oven to 180°C. Melt the unsalted butter and let it cool slightly, then cut the cream cheese into small cubes. In a large bowl, mix the cake flour, baking powder, sugar, and salt. In another bowl, whisk together the egg, milk, and melted butter until combined. Pour the wet mixture into the dry ingredients and gently fold until no obvious dry flour remains, being careful not to overmix. Add the cream cheese cubes and most of the cheddar cheese, then fold gently to distribute them evenly. Spoon the batter into muffin cups until each is about three-quarters full, then sprinkle the remaining cheddar cheese on top. Bake for 18 to 22 minutes until the tops are golden and the cheese is melted. Insert a toothpick into the center to check for doneness; it should come out without wet batter. Let the muffins rest for about 5 minutes before removing them from the pan. Serve warm for the best soft, moist texture and rich cheesy flavor.
