@cookingwithuri: Host Like a Spaniard — Episode 2 Gambas al Ajillo There are many ways to make gambas al ajillo in Spain. Some people cook them in a pan, others slowly confit the garlic in olive oil. This is my super simple version. Slice a few cloves of garlic, add a pinch of dry chili, place the shrimp in a dish with plenty of good olive oil… and roast everything in the oven at high heat for about 5 minutes. Finish with parsley if you like — or leave it as it is. But the most important ingredient? Bread. Because that garlic-infused olive oil at the bottom is too good to waste.
