@mirsdairyfree: How to Properly Peel Mandarin Oranges - Consider this Part 1 of my kitchen tips&tricks series - I loooveee mandarins but hate the outer layer, and this makes them so much more juicy! Ps: you can find pectic enzyme on Amazon, your local bulk store, or some specialty grocers/supply stores! - Preparation: 1. Peel the outer layer of your mandarins (or any citrus), then place the segments in an air tight container. 2. Submerge fully in water, and sprinkle in a bit of pectic enzyme. I usually use about 1/2tsp per litre - a little goes a long way! Close the lid then shake it to mix the enzyme in fully and set in the fridge. 3. The most healthy part of the orange is the pith. It has more Vitamin C than the orange fruit part . The pith also has hesperidin that is very anti-inflammatory. The white inner skin of the orange also has hesperidin so cut it out of the skin . The fruit has little hesperidin.
Just eat the pith after. It is too nutrient rich to throw away . Or put in cool water and drink. Don't use hot water .
I cut the white pith off the inner skin and keep it in the freezer. I eat some everyday.
Google Hesperian to see why it's so precious and you will eat the pith too!

I’m assuming it’s for optics, but when I eat an orange the pith, it’s like so good for you, but besides that, it’s fun to eat. I dissect my food and oranges are a fav of mine because there’s so many parts to it. Just saying. But this is good to know, they look like little jewels. Yummy ! 🍊🧡
