Frieren is so “back in my day we had to walk uphill in the snow both ways” but I think the main thing is, as we saw in the first trial, using the fancier more complicated spells can make even older experienced mages completely drain their mana. Using basic spells expends less mana and so you basically just have to defend and wait/tire them out.
