Add salt & pepper to taste PICO: Then dice an onion Dice 3 Roma tomatoes Finely chop cilantro Add all into a bowl Squeeze a lime into & salt & pepper to taste. Mix and set in fridge. Shred some Monterey Jack Take some some small flour tortillas of choice Coat one side of tortilla with avocado oil flip over then add the cheese and chicken In the same pan chicken cooked in add oil & your cheese & chicken tortilla, let the cheese start melting then fold over.
