The Sear: Toss the sausage coins and diced poblano into the bacon fat and a dusting of Meat Church The Gospel. Sear until the edges are beautifully browned and the poblanos have a deep char. Toss in can of drained jalapeños during the last 60 seconds just to heat through, then remove everything from the pan and set aside. 3. The Sauce: Lower the heat to medium. Sauté your onion and garlic in the remaining fat until soft. Pour in the chicken broth and heavy cream, drop in the full block of cream cheese, and season heavily with Pit Boss Cowboy Butter (I like to slowly melt my cream cheese then once it’s fully melted bring to a simmer)  4.
