**Serves:** 4 **Total Time:** About 35 minutes ## Ingredients ### For the Chicken - 1½ pounds boneless, skinless chicken breasts or thighs, cut into 1-inch pieces - 1 tablespoon olive oil - 1 tablespoon chopped chipotle peppers in adobo - 1 tablespoon honey - 1 tablespoon lime juice - 1 teaspoon smoked paprika - 1 teaspoon ground cumin - ½ teaspoon garlic powder - ¾ teaspoon salt ### For the Bowls - 3 cups cooked rice - 1 can (15 ounces) black beans, drained and rinsed - 1½ cups corn - 1 teaspoon olive oil - 1 avocado, sliced - 1 cup pico de gallo - Lime wedges and fresh cilantro ### For the Creamy Cilantro-Lime Sauce - ½ cup plain Greek yogurt or sour cream - ¼ cup mayonnaise - ½ cup fresh cilantro - 2 tablespoons lime juice - 1 small garlic clove - ¼ teaspoon salt - 1–3 tablespoons water, to thin ## Instructions **1. Season the Chicken** Toss the chicken with olive oil, chipotle, honey, lime juice, paprika, cumin, garlic powder, and salt. **2. Blend the Sauce** Blend all sauce ingredients until smooth, adding enough water to make it easy to drizzle. **3. Char the Corn** Heat 1 teaspoon olive oil in a large skillet over medium-high heat. Add the corn and cook for 4–6 minutes, stirring occasionally, until browned. Transfer to a bowl. **4. Cook the Chicken** In the same skillet, cook the chicken in two batches for about 6–8 minutes per batch, turning occasionally, until browned and cooked through to 165°F. Reduce the heat if the honey starts browning too quickly. **5. Warm the Beans** Heat the black beans in a small saucepan with a splash of water and a pinch of salt. **6. Assemble the Bowls** Divide the rice among four bowls. Add chicken, beans, corn, pico de gallo, and avocado. Drizzle generously with cilantro-lime sauce and finish with cilantro and a squeeze of lime. #easy #EasyRecipe #food #dinner #dinneridea
