@jessthomofit: Feta, tomato and butter bean bake with chicken and crispy potatoes, the ultimate ‘use whatever’s in the fridge’ dinner that’s high in fibre and protein. You could also just make the sauce and have with pasta and throw in whatever veggies you have in the fridge! 📌 420 cals, 9g fibre, 34g protein SERVES 4: Feta & bean bake - 200g queen butter beans & bean stock (I used @Bold Bean Co) 300g cherry tomatoes 1/2 tsp olive oil 125g feta 3 garlic cloves Pinch of crushed chilli flakes 1 tsp dried oregano For the chicken- 4 chicken escalopes (You could use 2 chicken breasts cut in half) 1 tsp olive oil 8g greek seasoning For the potatoes - 680g white potatoes (raw weight and cubed) 2 sprays of olive oil spray 1. Pre heat your oven to 180C then marinate your chicken in the olive oil and seasoning and leave to the side while you prep the veg. 2. Add all the ingredients for the feta and bean bake into a large baking dish and then cook in the oven for 25-30 minutes. 3. Cut your potatoes into cubes and toss in olive oil and cook at 200C in the air fryer for 15-20 minutes. 4. Pan fry the chicken until cooked through. 5. Mash all the ingredients of the bake together to create a rich creamy sauce (the more butter beans you mash, the thicker the sauce will become) 6. Serve up and ENJOY! #highfibre #DinnerIdeas #dinner #EasyRecipes #EasyRecipe
