@rennae64: easy recipe below Follow happy with my first bunny loaf attempt... so cute I didn't want to eat it! got over that really quick once I cut my first slice My Go-To Sourdough Loaf Ingredients: • 100g active sourdough starter (bubbly & fed) • 325g warm filtered water • 500g bread flour • 10g salt In a large bowl, whisk together starter + warm water until milky. Add flour + salt and mix until a shaggy dough forms. • Cover and let rest 30-45 minutes. • Do 3 rounds of stretch & folds every 30 minutes. Cover between each round. • Let dough rise on the counter for 2 hours • Turn dough onto a lightly floured surface. Shape into a tight ball. • Place into a floured banneton or bowl. Cover + refrigerate overnight (8-12 hrs). Preheat with dutch oven inside the oven at 475°F (245°C). Score or make bunny as shown in the video, place into hot Dutch oven. Bake: • 30 min lid ON • 5 min lid OFF (until golden) • Let rest at least 1 hour before slicing (l know... hardest part #sourdough #springtime #easterbunny #sourdoughbread #sourdoughbaking
I tried this for Easter. They did not elevate like the ones in pic. Very little elevation and dough was dense. I mixed when starter peaked and I did stretch and folds with 30 min rest time in between. It was about 11 pm and did not want to wait out fermentation on counter so I put in fridge in a covered bowl for about 11 hours. Next day I shaped and baked bunnies. Do you think it was lack of counter bulk fermenting and too many hrs in fridge ? I used King Arthur bread flour.
