I used to run a bakery. I had access to fresh sourdough daily. But guess what? Sometimes you just want a nice squishy loaf that won’t be moldy in two days. Sometimes you don’t have the money for that kind of waste. And that’s okay too 👍

We don’t want soggy bread. I want to make a sandwich in the morning before work and have it still be a sandwich at lunch. Some water resistance is probably a good thing.

Nature's own has an amazing protien/keto bread that has so much protien and fiber and it is soft and THICC and chewy. Its not for everyone but I love it.

So back in the early 1900s they used to bleach moldy dough so they didn’t have to throw it out and sell the bread and people got sick.
