Bavette is such an underrated cut of beef and a pity it’s rarely stocked in supermarkets. It takes on marinades well – a cut of choice for doing carne asada – so I chose to go Goan and play on the theme of the beef vindaloo. In a rare act of generosity I’m writing down the ingredients I used: The spice mix: Cumin seeds Coriander seeds Fennel seeds Pepper Kashmiri chilli powder Paprika Fenugreek Garam masala The beef marinade: The above spice mix A handful of garlic cloves A thumb sized piece of ginger Salt The vindaloo sauce: The above spice mix A handful of garlic cloves A thumb sized piece of ginger Onion Butter (preferably ghee) Crème fraîche (not traditional but I wanted it in there to have a butter chicken-like velvetiness) Tomatoes Scotch bonnet Salt Bombay aloo: Potatoes The above spice mix Cooking oil Mustard seeds Salt The coriander sauce: Red onion Jalapeño Garlic Mango chutney Coriander Mint Lime Salt #vindaloo #bavette #bombayaloo #currynight #steaknight #steak #curry #dinner #Recipe
