ROASTED PECAN TAHINI DATE BARS. Throughout my years as a personal chef in the Arab World, I prepared this for some of the most discerning palates, including members of the Royal Family. It was an absolute favourite at gatherings. When you are working with nature’s most potent ingredients, there is nowhere for low quality to hide. This is the ultimate lesson in choosing the best, even in the simplest moments. I make this when I need a grounding, high-vibrational treat that supports my system without the inflammation of refined sugars or processed additives. It’s organic, high-integrity, + proof that quality is the only luxury that matters. THE INGREDIENTS 14 organic medjool dates, pitted 1/2 cup organic runny tahini 1/4 cup organic A2 butter 1 tablespoon organic orange blossom water 3/4 cup organic pecans 125 g organic 85% dark chocolate, melted a good pinch of flaky sea salt THE METHOD Preheat + Roast: Preheat your oven to 180°C. Spread your pecans onto a lined tray + roast for 10 minutes, tossing halfway through. Keep a close watch - they toast fast + tend to catch + burn. Prepare the Date Base: Lay your dates into a lined baking tin. Press them down firmly to create an even, compact base. Layering the Texture: Scatter the pecans over the dates, pressing them lightly so they anchor into the fruit. The Tahini Layer: Pour over + evenly spread out the tahini across the pecans. The Royal Infusion: Gently melt your butter + whisk in the orange blossom water. Pour this fragrant mixture slowly over the tahini layer. Chocolate Finish: Pour chocolate over the top + give it a gentle marble swirl. Finish with a generous pinch of flaky sea salt. Set + Slice: Place in the fridge for 1 hour to set, then slice into squares to reveal those beautiful, decadent layers. SAVE this to your personal library for your next high-standard gathering. P.S. When working with 85% cacao, I always choose between the aromatic lift of orange blossom or the warmth of cardamom to balance the bitterness. I prefer orange blossom for this cake - what about you: floral or spiced?
