Chef here, I cook with stainless steel constantly because I find it creates the best clean sear and fond next to cast iron or carbon steel. What it looks like to me is that you are stirring the food around too often and too early. When you cook on stainless, you need to use a bit more fat than you usually would, as in more cooking oil. Then, when you are searing meat, you need to wait until that meat naturally separates from the pan. What it looks like in your video, is that you tried to force the protein to move, so it tore and left the searing part on the bottom of the pan. It will unstick, you just have to wait long enough. This is why you want to cook your meat at more of a medium or medium high and allow it a longer cook time, so that when the protein releases itself from the pan it is also going to be pretty much perfectly cooked or close.

Pre-heat. Add fat layer. Add food. Allow to sear. STOP TOUCHING IT.

No oil, no seasoning, probably too high temp…

You’re not allowing your pan to come to temp before you cook. Let it heat until you can drop water on it and it dances around the pan, then oil.

1) pan is crowded 2) not hot enough 3) not sure how much oil but doesn’t look like enough 4) you have to let food cook in stainless until it’s ready to release and will naturally release from the pan to flip

You need to preheat the pan. Then reduce the heat apply oil let the oil heat and roll around the pan then place the food in.

Pre-heat the pan. Check if it's hot enough with a little water. if the water becomes little bubbles that slide around then it's ready. Add your oil/fat. Cook the meat and let it cook. Leave it alone! When it's ready to flip it should come up easily.

All good, that’s sauce now. Add more oil, fry some onions or shallots, Deglaze the pan with some wine, let the alcohol cook off and add some butter to make it silky. Delicious

Not letting it heat up enough. It should be so hot that water bounces around the pan. If it just sizzles, it’s not hot enough.

People are pretending like this is common knowledge and not helping you(which is annoying). Just preheat your pan, toss a little water on the surface, and if the water forms into a droplet and ‘dances’ on the surface of the pan, you are ready to cook! That leidenfrost effect means that there is a layer of vapor preventing your food from actually touching the surface of the pan.

Stop cooking in cold pans. If water sizzles it’s not hot enough. Throw water droplets in the pan. If they dance it’s hot enough.

Stainless sucks. You need a lot of oil/fat, high heat and need to keep things moving fast. Cast iron; even more so. No shame in good old Teflon.

Your pan was not fully preheated before you put the chicken in. You're going to want to let it heat up until droplets of water will skip and glide across the surface of the pan instead of sizzling or bubbling.
