Hello! I would recommend not stirring the sugar and water mixture. Make sure you use half the amount of water as sugar (1 cup of sugar to 1/2 cup of water), and try to ensure the water covers all the sugar. If it doesn’t, you can move the water around by gently turning the pan. Then let it boil until it turns an amber color. Once you’ve done that, cover the fruit with the sugar (syrup?) and immediately dip it into ice water.
