@manisha_yeager: Flaky Fried Cod Fish Ingredients: 2 cups AP flour 1/4 cup corn starch 1 tsp baking powder 1 tsp salt Any other seasonings of choice 3 cups COLD water 5-6 raw cod fish fillets Oil for frying Directions: 1. Season cod on both sides and set aside while you make your batter. 2. Heat vegetable oil to 350°. 3. To make batter add the flour, corn starch, baking powder, salt and any other seasonings of choice to a wide dish. Whisk together. 4. Add COLD water a cup at a time. You want the consistency of a thick batter. If the batter is too thin it will not coat the fish well. 5. Begin by laying cod in batter coating one side. When it is coated flip and coat the other side. 6. Hold fish up and let excess batter drip from fish. 7. Submerge the fish in oil about an inch and run it back and forth for a minute. This helps the fish not just sink to the bottom of the fryer. 8. Drop fish all the way in the oil. Repeat until you have one batch dropped. Do not crowd the oil or it will drop the temp and your fish will be oily and soggy. 9. Fry on one side for 7 minutes and then flip to other side and fry for 5 more minutes approximately until fish reaches an internal temp of 145°. 10. Place cooked fish on a cookie sheet with a wire rack to drain. 11. Immediately after taking the fish out of the oil sprinkle a little bit of salt on top. 12.
